As the weather starts to get cooler there is nothing that get’s my tastebuds tingling more than a delicious, hearty soup. It is truly the ultimate comfort food, especially when it included potatoes. I guarantee your kids will gobble this meal up so fast and they’ll be asking for seconds!
Side note…Did you know that Giant Tiger carries groceries?! I went in to pick up some school stuff for Austin and was surprised to see how large their grocery department was. Needless to say I’ll be shopping at Giant Tiger more often now that I know I can buy my grocery items there too. It’s always a mom win when you can find a one stop shop that carries everything you need…not to mention my bill was significantly lower than my usual grocery shop.
Ok, on to the soup…I found this recipe via Red Apron Girl and tweaked it a bit to make a larger portion for our family of five. You are going to want to weave this recipe into your meal planning this week because it is delish! Your taste buds won’t be disappointed…
Ingredients
5 lbs potatoes, peeled and cut into small cubes
1 lb bacon. cooked and chopped
1 onion, minced
5 garlic cloves, minced
3 tbsp flour
4 cups chicken broth
2 1/2 cups shredded cheese
3/4 cup half and half (can use heavy cream)
green onions
salt and pepper to taste
Instructions
Boil potatoes in a large pot until fork tender
While potatoes are boiling, saute onion for about 8 minutes. Add garlic and continue to saute for a couple more minutes
Add flour and cook for 1 minute.
Slowly add in 1 cup chicken broth while scraping side of pan.
Add in remaining chicken broth and simmer.
Add cheese into soup until melted.
Once potatoes are done,drain and rough mash with potato masher.
Add potatoes to cheese and soup mixture.
Add half and half and salt and pepper to taste
Let cook for about 5 minutes.
Serve and top with bacon, green onions, and grated cheese
